Gotta love a girl on the go, which most of us are. I swear, though, Krista Steinbach does not know how to slow down, and I’m immensely grateful for that. Steinbach is the local pastry chef who discovered her baking gene when she was in the military in Iraq. She came into our sights with her cupcake shop, but then she decided to run the pastry program at The Bachelor Farmer. Now she’s doing something really different, something less flaky-glossy pastry and more sturdy-hearty real.
Along with CrossFit pal Mary Kosir, she has started the WholeMe line of grain-free super snacks, largely inspired by Kosir’s husband’s diabetes diagnosis. Healthy focus is right on for this month, but let’s just admit that we are happy to have a dessert maven working the recipes.
The all-natural grain-, gluten-, dairy-free cereal called EatMe is a hearty, nutty blend of almonds, seeds, coconut, and honey, but it’s the dense and chewy bars that will likely hook you. For those who fear the leaden flavor of energy bars, these are a beacon. The WakeMe bar is laced with cocoa nibs and espresso for a power kick to the mouth without venturing into that cloyingly sweet “mocha” territory. And the DateMe bar, which is almost squishy, brings in the sweetness of dates but cuts it nicely with pecans and almonds. Both could easily earn a place in my desk drawer or gym bag.
