Organics have a long tradition in Eagan, thanks to Garden of Eagan, now owned by the Wedge Co-Op.
Just a 20-minute drive from both downtowns, Eagan’s central location and suburban feel have landed it among Money Magazine’s top 20 most livable cities five times—more than any other Minnesota city. Eagan is the largest community in Dakota County, home to 66,810 residents, 11 large employers, 55 parks, and some of the best schools in the state.
Eagan was designated in 1860 following Minnesota’s 1858 statehood. The small farming community gained national recognition as the “Onion Capital of the United States” beginning in 1885. The 1950s birth of the Eisenhower Interstate Highway System helped lead Eagan’s transition from farmland to suburb, and Eagan grew tenfold from 1950 to 1970.
Because Eagan’s largest population boom occurred during the 1990s, most of its homes, apartments, townhomes, and condos were built in the past 25 years. Expect modern styles and conveniences. “If you are a young professional, new in town, or new to Minnesota and want to be near to everything, Eagan’s the place for you,” says mayor Mike Maguire. “You can get to all those big-city things, while still being able to make a green getaway here.”
