Kids usually know what they want, even if it doesn’t exist. So for parents trying to figure out how to incorporate fishing, Cinderella, and “purple, everything purple” into one birthday party, Amanda Luecke is a good person to know.
Luecke chucked a career in tech support to combine her love of art and baking, opening custom cookie bakery Minnie’s Cookies out of her home in Plymouth earlier this month. The Gustavus grad studied art in college, and perfected her “soft, slightly sweet” sugar cookie recipe with her late mother, Mary, a practiced baker who was known as Minnie to her inner circle and for whom the business is named. “She used to bake 15 different types of Christmas cookies each year and then invite the neighbors to bring tins over and take what they wanted,” Luecke says. “My passion comes from years of baking with her and seeing how much love she put into every delicious food she made.”
