Smoked Herring With Cranberry Horseradish Sauce

Recipe from the Angry Trout Cafe in Grand Marais, found in The Minnesota Homegrown Cookbook


½ c. sour cream
¼ c. sugar
1 T. horse radish
1 ¼ c. fresh or frozen cranberries
2 T. red onion, minced
Smoked herring and/or smoked, de-boned trout
Slices of French bread


In a bowl, mix sour cream, sugar, and horseradish. In a blender or food processor, blend cranberries and onion to a slightly chunky consistency. Do not liquefy. Add cranberry-onion blend to sour cream mixture and mix. Refrigerate for a while to blend the flavors. Serve with smoked herring or de-boned smoked trout and slices of baguette.
