If sushi is quickly becoming our new food, I say GREAT. There’s no doubt that sushi has invaded American eating culture (hello cream cheese–loving Philly rollers, I’m looking at you). There are countless strip-mall sushi joints popping up all over, and last summer we witnessed the success of our first sushi food truck, Sushi Fix. If ever there were a spokesman to help catapult sushi into the Minnesota mainstream, it would be the truck’s owner, Enkhbileg Tserenbat, aka Billy. His gregarious nature and overflowing goodwill are only equaled by the level of quality his raw fish creations exhibit.
Billy recently opened his first restaurant version of the truck in Wayzata. Cue the urban disappointment: “We have to drive out THERE?” Yes, but only if you want fresh and impeccably constructed rolls, inventive Edo-style sushi creations that you can’t get on the truck, and unique offerings such as a whole grilled Surume squid that is seasoned and sliced to be long and luscious, not to mention snacky blistered shishito peppers topped with bonito flakes that dance and shimmy in the heat. The standard of quality for the fish is very high, simply proven on the sashimi platter, which may yield dense and buttery raw salmon, silky toro, and firm, sweet yellowtail.
Already rooted in the lake town’s culture, the small joint is packed with locals on any given evening ordering the green-soy-paper-wrapped Wayzata Trojans roll while Billy reels from behind the sushi bar and goes table to table pouring sake for regulars and shouting “Kanpai” (Japanese for cheers). It doesn’t matter if you eat unagi or not, he’s happy to see you and happy to be creating sushi fans, whether it’s from a downtown truck or a suburban strip mall.
