JD Fratzke and Tim Niver have kept their commitment to stay in St. Paul with their new sister restaurant to The Strip Club. Saint Dinette opened earlier this summer in Lowertown after lease and construction delays, though now the prolonged debut seems almost planned as the eatery is perfectly positioned to satisfy hungry citizens headed to the Saints’ stadium or the farmers’ market. The minimalist space is airy and bright, and the playful menu is an eclectic mix of Mexican, modern American, and bistro French by way of Montreal. Be assured that the tight-knit team, which includes chef de cuisine Adam Eaton and general manager Laurel Elm, is more than ready.
