What do you do after winning a bronze medal in the global Olympics of pastry? Go to Disneyland? Get a TV show? Endorse things? If you’re Patisserie 46’s John Kraus, captain of the U.S. Coupe du Monde pastry team, you keep baking. For Kraus, that means opening a second shop, Rose Street Patisserie in Linden Hills. Along with the love of his life, designer Elizabeth Rose (fitting, right?), he’s created a world-class patisserie in a soaring space banked by a glass wall. Jeweler-style display cases show off everything from exquisite handcrafted chocolate bon bons to craggy peanut butter cookies. But for all the finery and global cred, there is no pretension here. You can get an oozing grilled cheese sandwich on house bread, grab a seat at a long wooden table, and relax, satisfied in the knowledge that Kraus is one of our own.
