When Landon Schoenefeld opened his first restaurant, HauteDish, he was all about taking traditional Midwestern dishes and smacking them with a modern twist. Tater tot hot dish has never been so playfully and creatively imagined. With his newest spot, Nighthawks, he’s turning his gaze to traditional diner food, but don’t expect deconstruction. Instead of playful whimsy, the chef has focused on craft. From a pastrami sandwich to chicken noodle soup to hot dogs, the dishes are straightforward but aim to be the best versions of themselves they can be.
