SPONSORED Each year at Surdyk’s we, like just about everyone else in Minnesota, experience a serious case of the winter doldrums. As the insanity of the holiday season’s constant rush wraps up, January comes at us seemingly out of nowhere. A potent cocktail of cold weather, hopeful New Year’s resolutions, and general post-holiday exhaustion makes for some quiet days around the Cheese Shop. No rest for the weary, however—we just can’t sit still. It’s in these calm, mid-winter moments that some of our best ideas come to us.
We experimented and perfected a dough recipe—a raised donut that is yeasty, light, and pleasantly savory—the perfect base for any array of glazes and toppings. This is where we got creative. Looking around the store, we found some of the coolest ingredients to top our donuts. Benton’s bacon, crispy and smoky, languishing atop a pool of maple glaze? Check. Stunning Slovenian sea salt sprinkled over Cordillera dark chocolate ganache? Another victory. And since we’re also a liquor store, it just made sense to try a boozy variety. Our Irish Breakfast is a recent favorite in these parts: Guinness and rum glaze topped with a dusting of espresso. Toasted coconut, house-made chai spice blend, Limoncello . . . who knows what we’ll pull off the shelf next.
It looks like the January boredom paid off; our donuts have been garnering attention from food people around town! Rick Nelson wrote a lovely piece on them in the Star Tribune, and Drew Wood of Thrillist Minneapolis came by to take what he calls “sexy donut photos” to feature on his site. The donuts even made it on TV when Twin Cities Live came by to check them out. With all this support, it looks like we won’t be giving up on donuts any time soon. We’re still cranking them out by hand each and every morning, and we often make a double batch on Saturdays. We open at 9 am, so come by early.
