While the lights are getting adjusted and the turf watered, there are fryers and griddles being installed on the concourses of the US Bank Stadium, future home of the Vikings, just waiting for the coin toss. But who will be the first stringers putting up food?
We got a sneak peek (and taste!) this morning, and the news is: I might actually watch some football this year. Aramark, who’s running the whole stadium, revealed these cool situations:
Andrew Zimmern has been working with Aramark on the stadium’s food program development from the get-go. He’ll launch two extensions of his AZ Canteen concept (which started as a food truck and grew to ball park spots for not only the MN Twins, but also the KC Royals, Pittsburgh Pirates, and Boston Red Sox). The AZC Rotisserie will feature rotisserie beef, goat, pork lamb, and poultry offered up by the half pound and pound as well as chopped and pulled for sandwiches of all kinds. And AZC Hoagies will be a partnership with Spoon and Stable’s Gavin Kaysen. The hoagie shop will offer Italian meatball, sausage, beef, and roast pork sandwiches along with bomboloni (Italian donuts). “I grew up watching the Vikings and to think I am now able to have a hand in creating an incredible experience for the fans is a dream come true,” commented Kaysen.
Maybe now officially the busiest small restaurant owners in town, Nick Rancone and Thomas Boemer will bring Revival Restaurant to the field, with all the fried chicken and southern specialties that implies. "It is such an honor to be a part of this group of amazing culinarians, who are both friends and colleagues, that we respect and admire,” said Rancone.
Ike's Food & Cocktails
Ike’s Food & Cocktails will also have an outpost at the stadium, putting up American classics including their steak sandwich and the signature massive bloody mary. “Nothing could be better than Ike’s and the Vikes coming together under one roof!” said Gene Winstead, co-founder of Ike’s.

So, Minnesota, are you ready?? These culinary partners will be bringing a whole lotta taste to the stadium. "The fans are going to get to indulge in some great Minnesota flavor," says J.P. Paul, Vice President of Corporate Development and Guest Relations for Minnesota Vikings.
