Seems like little Lake Street in Wayzata is becoming quite the hot spot in the West Metro. Ryan Burnet (of Bar La Grassa, Burch Steak, Barrio, and Eastside) is making his first foray into the suburbs, and he's landing smack in the middle of the lake town.
In the closed-to-relocate People's Organic spot on E. Lake St., Burnet plans to launch a yet-to-be-named quick-service healthy eatery. Look for the new concept to feature made-to-order salads with local organic produce, housemade dressings, naturally-raised meats as well as hot seasonal sides, and a beverage tap system with Kombucha and cold press. Not too unlike the vibe that People's Organic had going, but a little more streamlined I think, more like a Freshii. The space is pretty big, so there will be seating for dining in, plus there's a sweet little patio out front that will be expanded. Beginning in August, construction will begin to make the interior a bit more sleek and modern.
The concept will also feature a proprietary online ordering app (soon available via Apple), which will allow eaters to order, pay, and then pick up without ever having to wait in line, a real bonus for the lake set who can pick up for boating.
Chef Bill Fairbanks, who's been with Burnet's company for years, will be masterminding the scratch menu and hopes to show that quick food can be both healthy and thoughtfully prepared. Besides the chef-driven signature creations, eaters will be able to DIY and pick their own ingredients for a custom salad if they like.
And if it sounds to you like this is being built for speed, it is. Wayzata is only the first location, the team is looking at a long list spots where something like this could work. Given that guy's drive and abilities, I'm thinking locally built salad world domination.
