Two great things that go great together: cookies and ice cream. Now turbo-jet that sweet notion with Rustica cookies and ice cream from a former chef of Milkjam Creamery, and you have exponential greatness.
Greg Hoyt has signed a lease at the Mall of America to bring us Rustica Cookies & Creamery. This completely new concept will showcase those cult-status cookies that Rustica is known for (they routinely ship chocolate-chocolate-chip across the country to fill the needs of MN expats), while adding to their repertoire with new cookie recipes.
AND THEN. Hoyt has brought on Ben Spangler, who was an opening ice cream chef at Milkjam Creamery, to develop a bunch of homemade soft serve ice cream flavors that will be available at the shop. As head chef of the new venture, he'll also be working on a bevvy of new sweet treat options. Homemade pimped out Twix treats? Signature bars stuffed with house cotton candy? I'm almost in sugar-shock with the possibilities.
Knowing the insane flavor profiling that's been going on at Milkjam, and considering the quality that Rustica has been known for, I think we can expect to be dazzled by this new shop that will open this winter on the ground level in the North section.
Rustica still maintains their flagship shop in Calhoun Village, and recently opened in Eden Prairie in the historic Smith-Douglas-Moore house. Can there be any doubt that this expansion heralds the possibility of having a Rustica Cookies & Creamery pop up on a block near you?
