One of the great questions hanging out over the Minneapolis food for the last year has been: Where and when will Brut, the restaurant of Erik Anderson and Jamie Malone, both named Food & Wine Best New Chefs, open?
Some details fell into place today: Brut will be going in to the former Sapor space on Washington Avenue in the North Loop, with a target opening of spring 2016.
“We’ve been trying to finalize that space for over a year and a half,” Anderson told me. “We put all our eggs in that basket, and there was definitely a time where it began to feel like people were wondering: Were we just making this whole thing up? So we want to get it out there. We weren’t just making all this stuff up.”
Other than the location for Brut, Anderson did not want to reveal too much more. Shea Design will be leading the architecture and design, with lots of input from Malone and Anderson. “We want to blur the lines a little between kitchen and dining room,” says Anderson. “After Catbird [Seat in Nashville, a restaurant he opened which was called one of the best new restaurants in the country by Bon Appetit and many other publications] I love being able to see the diners and being able to have a view of everything going on around us.” The restaurant will be French-leaning, around 70 seats, and Anderson promises more details will be leaked in the coming months about other important personalities contributing to the restaurant, both local and imported.
