Q: What are Quince?
A: Only one of the most ancient fruits, sometimes thought to be the actual “apple” in the whole Adam and Eve debacle. Quince is a sunshine yellow fruit that rather looks like a roundish knobbly pear, and it smells heavenly. You have to cook it to eat it, it’s pretty hard and sour. Cooking softens the flesh and turns it sunrise pink, and it has a high pectin content making it ideal for jams and jellies, witness the Spanish membrillo (quince paste). The season usually runs through December, you can find them at Lunds/Byerly’s or Kowalski’s. Why not try some in pancakes?
