Add this stat to the “I am ashamed to be an American list.” I saved this from last week as a run-up to Thanksgiving. I ask you, why—in the greatest country in world history and in a place and time where this is totally unavoidable and unnecessary—are there Americans who are hungry and desperately in need of our help? Ann Kim is opening Pizzeria Lola at the end of this month on the corner of 56th Street and Xerxes Avenue in southwest Minneapolis. Blah, blah, blah, you say. Another pizza place? Well something in the press release caught my eye and put this on my radar screen. Pizzeria Lola is doing wood-fired pizza and promised a soft egg pizza. Awesome. My favorite pizza of all time is a pizza with a fire-roasted egg in the middle for crust dipping. The other slick thing is the oven. PL is using a Le Panyol oven and there aren’t too many of those in this neck of the woods. The wood-burning oven is built from Terre Blanche clay that hails from Larnage, France. I have worked with them overseas and they make some killer product. Can’t wait to see if Miss Kim has got the goods.
