One Great Plate: Spatchcock Chicken
The first thing you should know is that spatchcock is NOT a made-up word, it is real, people. It’s a term that refers to a cooking technique for chicken, in which the bird’s spine and sternum is removed so it can be spread and laid flat, shortening cooking time. It’s basically like butterflying. I only know of one place in town who is delivering their chicken thusly to your table, and that’s the gang at Bar La Grassa. That bird is undersung.
