One Great Plate: Pork Rillette

One Great Plate: Pork Rillette

Are you maybe a little afraid to order something you’re not sure how to pronounce? If you’re afraid of pork REEE-ET then you are missing out, chums. This little porky spread is a potted meat, made by chopping pork, salting it heavily, and cooking it in fat until it is shreddy. It is then cooled with some of the fat to make a paste, mush like a pate, but more like salty brown jam. It can be made with duck or goose, but pork is so lovely, isn’t it?
