I feel panzanella was a big dish from the 80’s, just when regional Italian was becoming the rage, way before carb-o-phobes squashed its glory. Essentially it’s a chunky bread salad made with hunks of chewy soaked-stale bread, ripe luscious tomatoes, and some other tasty veg thrown in. It’s actually a perfect hot August dish, light but filling, and I think it’s making a comeback. Mozza Mia has a nice one with gorgonzola, Mona Restaurant is offering a small plate panzanella with zucchini and dill-basil vinaigrette, Grand Café has it as a little side dish to dinner, and Tilia is also offering a little version as a side, that one is played with mushrooms, Madeira wine, and truffle.
