We are about to go mad, simply mad for fregola. No, it’s not a Jim Henson inspired muppet spin-off, nor is it a souped-up version of a Venetian water taxi. Fregola is small round orbs of pasta, similar to Israeli cous cous, that has a nutty, toasted quality to it. You can find it in a refreshing cold salad dashed with toasted carrots, mint and goat cheese at Devil’s Advocate, or with a touch of pea tendrils, basil, and feta at Mona. If you feel the need to be creative, find bags of the uncooked, dried pasta in the Surdyk’s Cheese Shop.
