One Great Plate: Compound Butter
Compound butter is amped up with other flavorful ingredients.
It seems to be all the rage in the cooking mags and food sites these days and a gloriously giant tub of it made an appearance on the condiment table at Barbette’s block party last weekend. What is it? Compound butter, which is simply butter that has been blended with other flavorful ingredients. Herb butter, honey butter, maître’ d butter are all forms of compound butter. Certainly a cob of corn is awesome with a plain pat, but think about amping it up with a hit of cilantro-lime butter for a change. Feel free to pop into Barbette, where the herb butter makes an appearance with grilled radishes, for the win.
