One Great Plate: Asparagus Soup

There is something so light and silky about a good asparagus soup. It’s like a grassy, lilting bowl of springtime whether you eat it warm or chilled. I’ve had a great bowl at Vincent as a start to a major meal, and of course you can’t miss a bowl of green from the Black Forest Inn during next week’s Spargelfest, but since soup menus often change and it can be hard to catch this seasonal beauty, why not follow the lead of My Fancy Pantry and whip up some in your kitchen.
