The metro’s first fresh-pressed juice shop, Truce opened this spring just off the main drag in Uptown. The tiny, modern shop has a giant hydraulic press in back that does the good work: By pressing fruits and vegetables with thousands of pounds of pressure, it allows the juice to be smooth and luxurious while retaining the maximum amount of vitamins and minerals possible. And, of course, we’re not just talking about apples and oranges—these juices feature complex and interesting combinations that might include beets, kale, spinach, celery, or chard along with ginger, watermelon, or limes. Each combo has a purposed health benefit. The Vacay, made of carrot, coconut, and lime, intends to boost immunity and replenish the body, while Morning Greens will rev your digestive system and kick-start your energy with a blend that includes apple, cucumber, lemon, and romaine. Pick a pre-made bottle, which stays fresh for three days, or choose your own mix to be juiced on the spot. The store also makes smoothies, including a PB + Greens that does a great job of mixing in a bit of protein.
