I got to talk to Erik Anderson on Saturday on my radio show. Erik, of course, is formerly of Nashville’s national big deal Catbird Seat and before that ran Minneapolis’ Sea Change. Anyhow, he recently moved back to Minneapolis and has been been doing pop-ups around town. Each has sold out and been great. Steph March and I went to one at Haute Dish, and Anderson’s roast pigeon from South Carolina with preserved cassis berries, and pinecone syrup is in the running for me for one of the best dishes of the year, as it was intense and piercing and light. Yeah, I know, it was a night lit for romance, and I fell in love with a pigeon leg! Anyhoo, it was a beautiful, wonderful, and expensive night.
But there's just one thing, Anderson told me that he’d like to do some cheaper, more casual pop-ups, but is having a hard time finding the right space. Namely, he and Bill Summerville, the sommelier of La Belle Vie, have been tossing around the idea of a fried chicken and Champagne night. But where? The restaurant would need to have a wine license, forty-plus seats, and a desire to host a pop-up.
